When one of them is off, the others pay for it. A hood that pulls more air than the make-up air unit returns drags the dining room into negative pressure, the RTUs run flat out, and the walk-in next to the fryer line runs 20 percent longer than it should.

Kitchen Pressure Balance: The Problem Most Restaurants Have
A commercial hood on a 12-foot cook line can exhaust 3,000 to 4,000 CFM. That air has to come from somewhere. If the make-up air unit is undersized, not running, or was never interlocked with the hood, the building pulls it through every gap it can find: the front door, the drive-through window, the RTU return, and the walk-in door gasket. The results:
- Front door slams or is hard to open; drafts at the host stand
- Smoke and odors roll out of the hood into the dining room
- RTUs cannot hold setpoint because they are conditioning outdoor air pulled through the envelope
- Pilot lights and standing burners blow out; gas water heaters backdraft
- Walk-in and reach-in units run longer because warm humid air is being pulled past their doors
We measure exhaust and supply airflow, check the interlock and damper operation, verify the MUA is heating or tempering as designed, and bring the kitchen to a slight negative relative to the dining room, which is where a code-compliant kitchen should sit. This one fix often solves “the AC can’t keep up” complaints that other contractors have tried to solve by adding tonnage.
Health Code and Inspection Readiness
Refrigeration temperatures and hood operation are two things every health inspector checks. We help you stay ready:
- Walk-ins and reach-ins verified to hold 41°F or below (cold holding) and freezers at 0°F or below
- Temperature alarms with phone notification on walk-ins, so a failure at 2 a.m. is not discovered at 9 a.m.
- Written service records for every visit, useful for inspections and for landlord and insurance documentation
- Exhaust fan and MUA operation verified so hood capture is effective during service
- Condensate drains and pans maintained to avoid standing water findings
Hood cleaning itself is done by a hood-cleaning contractor; we handle the mechanical side (fans, motors, belts, MUA, controls) and coordinate with your hood cleaner where it helps.
How We Work
Every diagnostic starts with measurement, not parts swapping. On HVAC that means superheat, subcooling, delta-T, static pressure, and amp draw. On refrigeration it means superheat and subcooling on each circuit, defrost verification, and a megohm test before anyone condemns a compressor. On ventilation it means airflow readings on the hood and the MUA and a pressure check between kitchen, dining room, and outdoors. We recover refrigerant on every open-system repair and weigh the charge back in; we are EPA 608 certified and carry factory training from LG and Daikin (certifications). You get a written summary of what we found and what we recommend, with prices, before we proceed.
Restaurant Maintenance Agreements
Restaurants are the reason our commercial plans include make-up air and exhaust fans. Our Medium plan at $299 per month covers three to four RTUs plus a make-up air unit; the Large plan at $459 per month covers five to eight RTUs plus MUA and exhaust fans. Refrigeration can be added. New Restaurant Build-Outs and Takeovers
Opening in an existing space? Before you sign, we can assess the RTUs, hood and MUA, and any refrigeration left behind and tell you what will actually run and what will not. For build-outs we coordinate MUA sizing with the hood contractor, RTU sizing with the kitchen load, and refrigeration placement so condensing units are not pulling 100°F air off the cook line.

Frequently Asked Questions
Our AC cannot keep up in the dining room. Do we need a bigger unit?
Often, no. In restaurants the most common cause is negative pressure from a hood that exhausts more than the make-up air returns. We check ventilation balance before recommending tonnage.
Do you service hoods?
We service the mechanical side: exhaust fans, motors, belts, make-up air units, interlocks, and balancing. Grease-duct cleaning is done by a hood-cleaning contractor.
Can you handle both our HVAC and our walk-in?
Yes. That is the point of this page. One technician, one number, one maintenance plan for the whole building.
What temperature should my walk-in cooler hold?
41°F or below for cold holding under the Texas Food Establishment Rules; most operators run 35 to 38°F. Freezers at 0°F or below.
Do you install temperature alarms?
Yes. A high-temperature alarm with phone notification is inexpensive compared to one lost walk-in of product.
How much does a service call cost?
Commercial diagnostic fee and hourly labor are published on the pricing page. Maintenance plan customers pay no diagnostic fee.
Can you come after we close?
After-hours service is available for commercial customers. Many restaurants schedule their quarterly maintenance before opening or after close, and we accommodate that.
Do you work with franchise operators?
